Today’s recipe is the result of one epic challenge by Lidl Belgium! The prize? 4 seasonal cookbooks and a meet & greet with Pascale Naessens, Belgian’s biggest female chef and cook book author! The challenge? Seasonal recipes! All we had to do was come up with a seasonal recipe with ingredients you can find in Lidl. I started brainstorming about a Spring recipe right away and knew very quickly that I wanted to do something with lamb and asparagus, which you can also still enjoy early summer. I had eaten delicious lamb epigrams from Lidl before but when I went to get my groceries for the challenge, I noticed some lamb burgers as well, which was actually even better suited for this recipe.
I’ve gone for a bit of a twist on those lamb burgers and actually turned them into grilled lamb koftas served on a wrap instead, to make them lighter than when served on a burger bun. Along with some spring salads and a easy light dressing these lamb koftas really are an absolute feast. To give it even more of a mediterranean feel and taste, I chose to serve it with tabouleh, which you can buy ready-made in Lidl. By adding some grilled green asparagus, feta cheese and fresh herbs, you’ll have the perfect side dish to eat along with those koftas! The recipe is really easy and quick as well, since most of the ingredients require no additional work at all. Anyway, enough with the talking, let’s get cooking!
Makes: 8 kofta wraps
Serves: 4-8 people
I personally was stuffed after just one kofta wrap, but I can imagine most people might be able to eat a second one, so it’s really just a matter of knowing what kind of eaters you’re having at your dinner table. If you are serving it for more than 5 people, you will need to buy more tabouleh, feta and green asparagus as the quantities below really are for 4-5 people.

- 8 lamb burgers
- 8 tortilla wraps
- 125g Deluxe grilled green asparagus (3/4 jar)
- 150g Greek feta
- 1 Multicolor salad
- 500g oriental Tabouleh
- 25g arugula
- 2 red onions
- fresh flat-leaf parsley
- 12 tablespoons of light mayonnaise
- 4 tablespoons of honey
- 2 limes
Needed: 16 skewers
First thing we need to do, is prepare our lamb koftas. It’s really easy to turn the lamb burgers into koftas, as they already are spiced perfectly, all you need to do is take a burger and knead it with your hands into a sausage shape. Split the sausage in two and stick each piece separately on a skewer and that’s it! Put them on a grill, which can either be a barbecue or a double-sided indoor grill or even a griddle pan. The time of the grilling depends on the thickness of your koftas but it usually takes around 5-7 minutes on each side until it’s no longer pink inside or outside. Slice up the red onions into thin slices and tear the lettuce into smaller chunks.
While the koftas are grilling, we can prepare our tabouleh salad. Simply drain the asparagus from the jar and cut them up in slices of 1/2-1cm. Cut the feta up in cubes and add them to the tabouleh along with the asparagus. Cut some flat-leaf parsley and add them on top of the tabouleh salad as well.
All that’s left now is to make the dressing. Simply mix the mayo with the honey and juice from the limes and set aside.
By now your lamb skewers should be done, so put the wraps in the microwave according to instructions on the package (we just want to heat them up a bit, so only 15-30 seconds at the most should be enough). Put some arugula and multicolor salad on the wrap, add the lamb koftas along with a couple of slices of the red onion. Spread the dressing on top and fold! Serve it with the tabouleh salad and enjoy your spring dinner meal.
